The choice is not accidental: the quality level of the raw materials and the refinement of the dishes dictate that excellence is favored over the masses as the catch arrives every dawn from the markets of San Benedetto del Tronto and Civitanova Marche, expertly processed in the day according to local tradition so much so that the dishes change and modify based on what in the night the Adriatic has offered the fishermen’s nets.
